‘Captain’s Bread’ - GMU Scientists’ Health Promoting Bread On Sale Soon

Gdynia Maritime University has entered into cooperation with one of the biggest baking companies in the Tricity area, baker and confectioner ‘Pellowski’ for the introduction to the local market of a new type of bread with exceptional health-promoting and satiety properties known as ‘Captain’s bread’.

Thanks to micronized bran, the bread is characterised by a very high amount of dietary fibre, and therefore has a high satiety index, a positive effect on bowel movements, has antioxidant potential, and reduces the feeling of hunger quickly and for an extended period of time. These functional properties are priceless for those who suffer from obesity or type II diabetes, want to prevent cancer, cardiovascular disease, and lose weight. The new bread made using only the natural ingredients of Polish grains is a response to the growing obesity of people in Poland, including children and young people, and other civilizational diseases. The innovative solution is intended to protect human health and improve quality of life, including for seafarers who have limited opportunities for physical activity in connection with their work.

Captain’s Bread owes its name to the place where it was invented, a laboratory at Gdynia Maritime University, a centre of higher education which produces future Merchant Navy officers and engineering and management personnel for the maritime industry and the coastal region, as well as its enormous functional potential, which is expressed in its high-satiety and taste qualities, factors which are important for captains and seafarers at sea.

The creators of the unique recipe which has been registered at the Polish Patent Office are scientists from the Faculty of Management and Quality Science, Associate Professor Dr Aneta Ocieczek, Dr Witold Kozirok, Dr Tomasz Pukszta, and Anna Urban-Rajniak.  

On 26 June 2024, GMU and baker and confectioner ‘Pellowski’ met to sign a contract and discuss their future cooperation. The completion of implementation work for the innovative product is planned for the first quarter of 2025. The creators of the solutions will also cooperate with the baker and confectioner on the development of new highly nutritious products, which will also be sold locally and could have a significant impact on the health of the residents of Pomerania, as well as visitors. The cooperation between the University and the company indicates that scientific experience, innovative technology and products can be successfully transferred to the industry. Both company owner, Grzegorz Pellowski, and GMU scientists and authorities underline the importance of Polish technological concepts for the development of key branches of the Polish economy.

In March 2024, the patented bread was presented at the cyclical Gdynia Innovation Days (GDYNIA I-DAYS) event promoting GMU inventions. The new product was given the Participants' Award, in particular for its outstanding taste, which those attending the event experienced in person.
